Gordingo’s was built around bold flavors, creative specials, good service, and the energy of bringing people together around food. Located inside Ecusta Brewing, Gordingo’s brings a fresh food experience to one of Brevard’s favorite local gathering places.
Gordingo’s began with deep roots in the restaurant and service industry.
Marc Kaufman, a longtime service industry professional with more than 20 years in the business, was already part of the Brevard food scene through Gordingo’s and Smoke On BBQ. In 2020, longtime associate Josh Chambers of Ecusta Brewing approached Marc about collaborating on a brewery and restaurant space inside the last standing building of the old Ecusta paper mill.
Marc quickly reached out to fellow industry lifer Bill Nassr, who also brought more than 20 years of restaurant experience. Bill had recently come off a brief hiatus following the closure of Magpie Meat and 3 in Brevard, and the opportunity to help create something new inside Ecusta Brewing felt like the right fit.
Together, Marc and Bill helped shape the early Gordingo’s menu around a simple idea: make food that is bold, satisfying, creative, and full of flavor.
Food speaks in a way that few things can.
Gordingo’s was built with respect for the food traditions that inspire it, especially the Latin flavors that have shaped so much of American food culture. But the menu does not stop in one place.
The inspiration comes from many tables, kitchens, food trucks, street stalls, family meals, neighborhood favorites, and restaurant experiences. Tacos, burritos, bowls, loaded nachos, wings, sauces, and rotating specials all become a way to explore flavor without overcomplicating it.
The food may not be traditional in one narrow sense, but it is authentic to Gordingo’s. It reflects the people behind it, the cultures that influence it, and the joy of making something familiar feel fresh again.
